Welcome to Spring Street Coffee, your neighborhood haven where coffee isn’t just brewed, it’s shared, explored, and celebrated. Led by roaster Drew Smith, Spring Street Coffee Roasters is the culmination of a lifelong journey through coffee, rooted deeply in community, curiosity, and craft. Inspired by small growers around the world, our mission is simple: to bring luxury-quality coffee roasted with intention and delivered at peak freshness to the everyday coffee drinker. Whether you’re a seasoned coffee nerd, someone who can’t function without that first cup, or a casual weekend sipper, there’s a roast here for you.
For Drew, the journey truly took shape during the stillness of COVID. While many were perfecting sourdough starters, Drew was experimenting with barrels. What began with barrel-aged BBQ sauce, thanks to a local distillery, sparked a deeper curiosity. Ideas followed (some messier than others): hot sauce, honey, and finally, the revelation—coffee. Like whiskey, coffee holds layers of flavor waiting to be uncovered. With an exceptional palate and a deep respect for the craft, Drew learned how to pair the right coffee with the right barrel, drawing out nuanced flavors that honor both. Through countless tastings and experiments, he discovered a love not just for barrel-aged coffee, but for the full spectrum of coffees and how roasting and brewing unlock their potential. His path from student to educator, explorer, and mentor has been defined by patience, passion, and an ever-deepening respect for the bean.
For Meg, the journey began behind the bar. Her first real job was as a barista, where early mornings were softened by the comforting aroma of fresh coffee. There’s something special about savoring a warm mug in the quiet morning light, surrounded by friends and conversation and that feeling never left her. Beyond the free coffee, it was the people that made it meaningful: regulars who became familiar faces, then friends. To now share this journey with the person she loves most has been the most beautiful ride. Sitting back with a cup Drew roasted and brewed, savoring the moment together, is still the best way to start the day.

Meet Dolly!
At Spring Street Coffee Roasters, Dolly, our adopted Treeing Walker Coonhound, plays a crucial role within our team. Her friendly demeanor and exceptional sense of smell are invaluable assets to our operation. Dolly has a knack for detecting the arrival of fresh bags of green coffee and signaling when the roaster is ready to begin its work. Her presence adds a unique and special dimension to our coffee roasting process, symbolizing our dedication to excellence and meticulousness.
In the near future, we are thrilled to introduce a new coffee blend named Dolly's Choice. This exceptional blend will not only enrich our coffee offerings but will also contribute to a noble cause. For every bag of Dolly's Choice sold, funds will be raised to support Nashville Humane, the very organization from which we adopted Dolly. This initiative reflects our commitment to giving back to the community and honoring the beloved members of our team like Dolly. Meet Porter!
We are thrilled to introduce Porter, our cherished adopted Lab/Shepard mix, who stands guard over our establishment with steadfast loyalty. Saved from the nearby animal shelter, New Leash on Life in Lebanon, TN, Porter's endearing characteristics have motivated us to create a unique coffee blend in his honor - Porter's. Meticulously crafted with carefully selected single origin beans, this coffee eagerly awaits the discerning tastes of coffee enthusiasts. With each purchase of Porter's, a portion of the profits will be contributed to the shelter that granted Porter his forever home, offering hope to other animals in distress.
